This meal is quick to prepare but gives all-day energy. Chia seeds are a major health food, providing your body with essential fiber that can lead to a healthier heart, reduced cholesterol levels, and a healthier gut. You can omit the nuts and fruit, but they add a lot to the dish and you can use whatever you have on hand. We like ours with sliced almonds or chopped walnuts and chopped dried apricots.

Ingredients

1 cup unsweetened almond milk

½ cup old fashioned oats

1 tablespoon chia seeds, plus more to garnish

1-2 tablespoons unsalted nuts (optional)

2 tablespoons dried or fresh fruit (optional)
Directions
Place almond milk, oats, chia seeds, and nuts in a small saucepan and let it come to a boil.
Cook about 5-7 minutes over medium heat, stirring occasionally.
Place it in a bowl and garnish it with more nuts, dried fruits and chia seeds, if preferred. Drizzle with balsamic and enjoy!
