Hearty Skillet Supper

Ingredients
- 1 pound ground beef
- 1 tablespoon Fustini's Tuscan Herb olive oil
- 1 tablespoon Fustini's 12 Year White balsamic
- 1 large onion, chopped
- 1 garlic clove, minced
- 1 cup chopped carrots
- 1 cup cubed peeled potatoes
- 1/2 cup beef broth
- 1/2 cup water
- 1/2 cup uncooked long-grain rice
- 2 tablespoons soy sauce
- 1 teaspoon salt
- 1/8 teaspoon pepper

- In a large skillet, cook the beef, onion, and garlic over medium heat until the meat is no longer pink, crumble the beef, drain off the fat. Deglaze the pan with the balsamic. Add olive oil and stir in the carrots, potatoes, broth, water, and rice.
- Cover and simmer for 30 minutes or until the rice and vegetables are tender. Just before serving, stir in the soy sauce, salt, and pepper to taste.
Recipe Note
Draining the meat fat and using olive oil gives this dish a more healthy option. Garnish with sriracha for a little zip. Adapted from tasteofhome.com.
