Herb Chicken Salad on Greens

Ingredients
- 2 - 2 1/2 pounds rotisserie chicken
- 1 red bell pepper, small diced
- 4-6 scallions, thinly sliced on the bias
- 1/2 tablespoon fresh rosemary, chopped
- 1/2 tablespoon fresh basil, chopped
- salt and pepper to taste
- 1/2 cup Fustini's Basil Crush olive oil
- 3 tablespoons Fustini's Citrus Oregano balsamic
- 2 teaspoons Horseradish Mustard
- Boston, Bibb, Endive and/or Radicchio leaves, separated
- Fustini's Riserva balsamic (optional)

- Using a fork, shred the chicken meat. In a large bowl, combine chicken, red pepper, scallions, herbs, salt and pepper. In a small bowl, whisk together the olive oil, balsamic, mustard, salt and pepper to taste and combine with the chicken mixture. Spread out selected greens onto a platter or individual salad bowls. Top with chicken mixture and drizzle with Riserva if desired.
