Herbed Tomato Salad with Raw Vegetables

Ingredients
- 1-pint cherry tomatoes, halved
- 1 small fennel bulb, julienned
- 2 pickling cucumbers, halved lengthwise and sliced ¼-inch thick
- 4 radishes, julienned
- 3 green onions, sliced ¼-inch thick
- 1/2–3/4 cup raw fava beans, peeled
- 1 cup raw green beans or asparagus tops, cut into 1-inch pieces
- 1/2 cup chopped parsley
- 6–8 leaves fresh basil, julienned
- juice of 1/2 lemon
- 2 teaspoons dried oregano
- 1 teaspoon sea salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder

Directions
- Toss first 9 ingredients (Tomato through basil) in a large bowl and set aside.
- Combine remaining ingredients in another bowl and whisk until emulsified. Taste to adjust flavors. Add dressing to salad and toss again. Let stand at least 1 hour to meld flavors.
