Kielbasa and Sauerkraut Sheet Pan Dinner

- 1 lb fingerling potatoes, cut in half lengthwise
- 1 cup heirloom carrots, sliced 1" discs
- 1 medium white onion, quartered
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 4 tablespoons Fustini's Medium SELECT olive oil, divided
- salt and pepper to taste
- 2 pounds smoked kielbasa, cut into 2" pieces
- 1 cup sauerkraut
- 1/4 teaspoon caraway seeds
Directions
- Preheat oven to 450 degrees. Line 2 rimmed medium sheet pans with parchment paper. Make a 12 x 5" rectangular tray with sides out of foil and set aside.
- In a medium bowl, toss potatoes and carrots with 1 tablespoon of olive oil and salt to taste. Spread vegetables out on one side of a sheet pan. Add kielbasa to the bowl and toss with 1 tablespoon of olive oil and add to the other 1/2 of the sheet pan. Roast until the kielbasa begins to brown and the vegetables are almost tender, about 20 minutes.
- In the same bowl, combine onions and peppers, toss with more olive oil, and spread on the other sheet pan, leaving a space for the "foil tray". In a medium bowl, toss the sauerkraut with the caraway seeds and spread in an even layer in the foil tray on the sheet pan. Place sheet pan in the oven and continue cooking both pans for another 15 minutes. until the vegetables are done and the sauerkraut is warmed through.
