Lemon and Pesto Shrimp Skewers
Ingredients
- 1 pound shrimp, peeled, deveined
- 2-3 lemons, sliced thin
- salt and pepper to taste
- 3 tablespoons Fustini's Pesto olive oil
- 1/2 cup Ligurian Pesto Spread
- 8-10 skewers

- Preheat grill to medium-high. If using wooden skewers, soak in water 20 minutes. Thread shrimp and lemon slices onto skewers. Drizzle with Pesto olive oil and season with salt and pepper. Grill skewers 4-5 minutes, turning occasionally until shrimp is done. Brush with pesto before serving. (pictured here with risotto).
