Bright, zesty lemon meets sweet, juicy blueberries in this tender yogurt loaf. Perfectly moist and drizzled with a lemony glaze—this loaf is a slice of sunshine!
Ingredients
For the Loaf
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup plain Greek yogurt
- 1 cup sugar
- 3 large eggs

1/2 cup Fustini’s Meyer Lemon olive oil
- Zest of 1 lemon
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh or frozen blueberries (tossed in 1 tablespoon flour)
For the Lemon Glaze
- 1/3 cup fresh lemon juice

1 Tablespoon Fustini’s Sicilian Lemon balsamic vinegar
- 1/2 cup powdered sugar
- Zest of 1 lemon
Directions
- Preheat your oven to 350°F (175°C).
- Grease a 9x5-inch loaf pan and line the bottom with parchment paper.
Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
Combine the Wet Ingredients: In a large bowl, whisk together the yogurt, sugar, eggs, lemon zest, and vanilla extract until smooth.
- Gradually whisk in the dry ingredients until just combined.
- Gently fold the flour-coated blueberries into the batter.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Lemon Glaze
- In a small bowl, whisk together the fresh lemon juice, powdered sugar, and lemon zest until smooth.
- Once the loaf is completely cooled, drizzle the lemon glaze over the top.
