Lemon Herb Chicken Salad

Ingredients
- 2 5 oz skinless, boneless chicken breasts
- 1 medium lemon, juiced
- Kosher salt and ground black pepper
- 3 tablespoons Fustini's Tuscan Herb olive oil, divided
- 1 teaspoon Fustini's Grilling rub
- fresh parsley for garnish
- 2 tablespoons Fustini's Sicilian Lemon balsamic
- salad greens of choice
Directions
- Place chicken in a bowl, pour 1/2 of the lemon juice over top and season with salt. Alternatively: For grilling, combine chicken, lemon juice, 1 tablespoon of olive oil, salt, pepper, and Grilling rub in a ziplock bag, or sealed container. Marinate for 1 hour and cook on a preheated grill until done.
- Heat 2 tablespoons of olive oil in a small skillet over medium-low heat. Add chicken to the hot oil, along with the remaining lemon juice, salt, pepper, and grilling rub spices. Sauté, until golden brown and the juices run clear, 5 to 10 minutes per side.
- In a medium bowl whisk together the remaining olive oil with the balsamic, salt, and pepper. Add greens and toss to coat. When the chicken is done, allow resting before slicing. Plate greens and top with slices of chicken.
