Mango Cucumber Salsa

Ingredients
- 1 firm-ripe mango, peeled, pitted, and diced
- 1/2 English cucumber, diced
- 2 tablespoons finely chopped scallion
- 3 tablespoons fresh cilantro leaves, chopped
- 1/2 sweet red bell pepper, chopped
- 1 tablespoon fresh orange juice
- 1 tablespoon Fustini's Jalapeno Lime balsamic
- 1 teaspoon Fusitni's Persian Lime olive oil

- Combine mango, English cucumber, scallions, fresh cilantro leaves and sweet red bell pepper. Mix orange juice, vinegar and oil and toss in with salsa. Refrigerate 1 hour to let flavors meld.
