Mashed Potatoes With Roasted Garlic and Chive Butter

Ingredients
- 5 pounds Idaho potatoes, peeled and cut into 1-inch cubes
- 2 garlic bulbs
- Fustini’s Medium SELECT olive oil
- Kosher salt and pepper
- 1 tablespoon Fustini’s Garlic olive oil
- 3 tablespoons butter, softened
- 3 tablespoons chives, chopped
- ¼ cup sour cream

- Preheat the oven to 400°,F. Place potatoes into a large stockpot and cover with cold water. Place over medium-high heat and simmer until tender, 15 to 20 minutes. Place garlic on a sheet tray, drizzle Fustini&rsquo,s Single Varietal olive oil over the top and season with kosher salt and pepper. Roast the garlic in the hot oven until brown and tender, 20 to 30 minutes. Let cool then cut in half and squeeze out the soft garlic. Combine the garlic with the olive oil, butter and chives ten set aside.
- When the potatoes are tender, drain thoroughly, then transfer to a stand mixer fitted with the paddle attachment. Process the potatoes on low to break them up. Season liberally with salt and pepper and add the sour cream. Process on low until the sour cream has melted, another minute. Add half of the roasted garlic and chive butter and mix to combine. Serve the potatoes hot with a dollop of butter over top.
Recipe Note
Can be made a day ahead, store sealed and reheat in a slow cooker for 4 hours.
