Mediterranean Turkey Meatloaf

Ingredients
- 2⁄3 cup onion, finely diced
- 1 tablespoon Fustini's Garlic olive oil
- 8 oz canned tomato sauce, divided
- 2 eggs, beaten
- 1 tablespoon Worcestershire sauce
- 2 tablespoons fresh basil, finely chopped
- 2 teaspoons garlic, minced
- 1 tablespoon Fustini's Tuscan Spice blend
- Kosher salt & freshly ground black pepper
- 2⁄3 cup panko
- 1 1/2 lbs ground turkey
- 1 tablespoon Fustini's 18 Year Traditional balsamic
- 1⁄3 cup shredded Italian blend cheese
Directions
- Preheat oven to 350 F. In a small pan, cook onion in the olive oil until soft. Cool slightly and drain.
- In a large bowl, add 4 oz tomato sauce, eggs, Worcestershire sauce, basil, garlic, seasoning, salt, black pepper, and panko. Mix thoroughly. Gently mix in ground turkey.
- Spray a 9 x 5-inch loaf pan with cooking spray. Transfer the meat mixture to the loaf pan, rounding the top of the mixture. Bake for 45 minutes. Meanwhile, mix the remaining tomato sauce, and balsamic with a whisk.
- Remove pan from oven. Spread tomato glaze evenly on top. Add cheese. Bake 15 to 20 minutes, or until internal temperature reaches 165 F. Cool 10 minutes before slicing. Makes 6 to 8 servings.
