- 1 lb frozen corn
- 2 tablespoons Fustinis Cilantro and Onion olive oil
- 1/3 cup red onion, small dice
- 1 tablespoon Fustinis Persian Lime olive oil
- 1/3 cup mayonnaise
- 1/3 cup cotija cheese, crumbled small (if you can’t find cotija, use feta)
- 2 tablespoons cilantro, chopped
- 1 teaspoon Fustini's Alderwood Smoked salt
- 2 tablespoons chili powder
Directions
- Preheat broiler on high. Toss corn with cilantro and onion oil in medium bowl, season with salt and pepper and place on a sheet tray. Place sheet tray directly under broiler until corn is just beginning to brown, remove and pour back into bowl.
- Add the rest of the ingredients and stir to combine. Garnish with a little extra cheese and cilantro.
