Ingredients

4 chicken breasts or thighs, slice breast lengthwise

1-2 tablespoons Fustini’s Meyer Lemon Olive Oil

1 – ½ tablespoons Fustini’s Garlic rub spice blend

1 teaspoon salt

1/2 teaspoon black pepper
Directions
Pat dry and trim chicken as needed, if using breasts, slice in lengthwise to make more of an equal
thickness breast. Trim thighs as needed. Pour oil over chicken and season with spices. Mix
thoroughly and set aside to marinate for at least 30 minutes overnight.
When ready to cook, take chicken out of the refrigerator to come to room temp. Preheat your grill, grill pan, or skillet over medium high heat. Lightly oil pan. Put chicken in, pressing down to make contact with the pan, being careful not to overcrowd the pan.
Cook for 6-8 minutes each side, or until the thermometer reads 165 degrees F. Alternatively, you can sear on one side for 6-8 minutes then finish cooking chicken on a sheet tray in a 400-degree oven for another 10-12 minutes or until done.
Let chicken rest for 5 minutes then slice and serve with couscous and sauce.
