Mozzarella Stuffed Chicken

Ingredients
- 4 boneless, skinless chicken breasts
- kosher salt and pepper
- 1 tablespoon Fustinis' Tuscan Spice blend
- 8 ounces of sliced mozzarella cheese
- 2 tablespoons Fustini's Tuscan Herb olive oil
- 2 tablespoons Fustini's Sicilian Lemon balsamic
- 14 ounces fire-roasted tomatoes
- parmesan, for sprinkling
- fresh basil, for topping

- Preheat the oven to 400 degrees F. Cut a pocket in the side of the chicken breast. Season the chicken all over (and inside!) with salt, pepper, and Tuscan seasoning. Cut 4 pieces of mozzarella and stick them in the pocket of each piece of chicken. We will use the rest of the mozzarella in the sauce.
- Heat the olive oil in a large oven-safe skillet or saucepan over medium heat. Add the chicken and cook on both sides until browned and golden, about 2 minutes per side. Remove the chicken and transfer it to a plate.
- Add the balsamic and can of fire-roasted tomatoes to the same skillet. Place the chicken back in the skillet, in the sauce. Tear up the remaining mozzarella and sprinkle it around. Bake for 15 minutes, or until the chicken is cooked through. Remove and sprinkle with parmesan and fresh basil.
Recipe Note
Substitute your favorite herb-infused olive oil. Serve with a side salad and pasta or rice. Adapted from howsweeteats.com
