Ingredients
- 3 pounds of waxy potatoes
- ½ cup wholegrain mustard
- 1/3 cup Fustinis Garlic olive oil
- 1/3 cup Fustinis Champagne vinegar
- 2 shallots, minced
- 2 large ribs celery, small dice
- 1 bunch scallions, sliced ¼” thick
- Kosher salt and pepper

Directions
- Cut potatoes into a large dice and place in a pot filled with cold, salty water. Bring the water to a boil, and simmer for 10-15 minutes until potatoes are just tender. Drain and allow to cool.
- While the potatoes cool, combine the mustard, oil, vinegar, and shallot in a bowl and whisk to combine.
- Add the potatoes to the bowl, along with the celery and scallion and toss with the vinaigrette. Taste and season with salt and pepper if necessary
