One Pot Peach Basil Chicken

- 1 pound chicken (breast, thighs)
- 1 teaspoon dried basil
- Kosher salt and freshly ground black pepper
- 2 tablespoons Fustini's Basil Crush olive oil, divided
- 1/2 white onion, diced
- 2 garlic cloves, minced
- 2 peaches, sliced
- 1/4 cup Fustini's Peach Bourbon Jam
- 1/2 cup Fustini's Citrus Oregano balsamic
- fresh basil leaves, chopped, plus more for garnish
Directions
- Preheat oven to 4oo degrees F. Season chicken with dried basil, salt, and pepper. Heat an oven-safe skillet over medium-high heat and add 1 tablespoon of olive oil. Add the chicken and sear both sides until it's golden brown, about 2 minutes per side. Remove the chicken and set it aside on a plate.
- Reduce heat to medium and add remaining olive oil. Add in the onion and garlic with a pinch of salt. Stir well and cook for about 5 minutes. Stir in peaches and add jam, and balsamic. Stir to combine everything. Bring the mixture to a simmer. Once simmering, add the chicken back into the skillet. Place the skillet in the oven for 20 minutes.
- When the chicken is done, remove and sprinkle with chopped basil. Serve with sauce and peaches.
