Ingredients
- 8 oz uncooked angel hair pasta
- 4 teaspoons Fustini's Tuscan Herb olive oil, divided
- 2 cups sliced fresh mushrooms
- 1/2 cup chopped green peppers
- 1/4 cup chopped onion
- 16 oz pizza or Savori marinara sauce
- 1/4 cup sliced ripe olives
- 1/2 cup shredded mozzarella cheese
- 1/4 teaspoon Fustini's Tuscan Spice blend

- Preheat the oven to 400 degrees F. Cook pasta according to package direction and drain.
- In a large cast-iron or ovenproof skillet, heat 1 tablespoon of olive oil over medium heat. Add mushrooms, and sauté, for 3-4 minutes. When starting to turn brown, add green peppers and onion. Continue cooking until tender. Remove with a slotted spoon and keep warm.
- In the same skillet, heat the remaining olive oil on medium-high. Spread pasta evenly on the bottom of the skillet to form a crust. Cook until lightly browned 5 minutes. Turn out the crust unto a large plate. Slide the uncooked side of the 'crust' back into the pan.
- Spread the sauce over the pasta 'crust', sauté,d vegetables, and olives. Sprinkle with cheese and seasonings. Bake until cheese is melted 10-12 minutes.
Recipe Note
Great for Meatless Mondays! Customize by adding your favorite pizza veggies. For more heat, use Fustini's Arrabbarata sauce. Adapted from tasteofhome.com
