Peach Blueberry Salsa

Ingredients
- 4 peaches, peeled and diced
- 1 1/2 cups blueberries
- 1 tomato, diced
- 1 medium cucumber, peeled, seeded, and diced
- 1 small red onion, diced
- 1 tablespoon Fustini's Basil Crush olive oil
- 1 tablespoon Fustini's West Michigan Blueberry balsamic
- 1 tablespoon honey
- 1 tablespoon minced tarragon
- 1 tablespoon chopped basil
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon cardamom
- white pepper

- Mix together peaches, blueberries, tomato, cucumber and red onion. Add olive oil, vinegar, honey, tarragon, basil, cayenne pepper and cardamom. Toss through to blend. Before serving, season to taste with a pinch of salt, white pepper and additional honey.
Recipe Note
Makes about 6 cups. Serve over grilled chicken or pork. Or enjoy it with tortilla or pita chips. Adapted from "Season to Taste"
