Peach, Fig and Prosciutto Flatbread

Ingredients
- 1 package of refrigerator flatbread
- 2 tablespoons Fustini's Meyer Lemon olive oil
- 4 tablespoons goat cheese, softened
- 2-3 peaches, peeled, pitted and sliced thin
- 2 figs, soaked in water 20 minutes, drained, chopped (optional)
- 10 slices prosciutto, cut into 2" pieces
- salt and pepper to taste
- 1/4 cup basil, roughly chopped
- 2 tablespoons Fustini's Fig balsamic
Directions
- Preheat oven to 450 F. Spread out flatbread and brush with olive oil. Spread goat cheese on top, followed by peach slices, figs (if using) and prosciutto. Salt and pepper to taste. Bake for 10-15 minutes (as package directions recommend). When sides are brown and cheese is melted, remove from heat. Top with basil and drizzle with fig balsamic.
