Persian Lime Granola

Ingredients
- 3 cups regular rolled oats (not quick-cooking)
- 1/2 cup dried cherries or cranberries
- 1 cup raw cashew nuts, chopped
- 1 cup coconut, shredded
- 2 tablespoons flax seeds
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 tablespoons brown sugar
- 3/4 cup honey
- 1/2 cup Fustini's Persian Lime olive oil
- 1/2 cup dried figs, chopped

- Preheat oven to 300 degrees. In a large bowl, combine all ingredients except figs and mix thoroughly.
- Line two large rimmed baking sheets with parchment paper and divide granola mixture between them, spreading out evenly. Bake 15 minutes. Remove from oven and stir well, spreading out the mixture evenly again. Return pans to the oven and bake an additional 30 minutes or until granola is golden brown. Allow pans to cool before mixing in chopped figs.
