Philly Cheesesteak Cups

Ingredients
- 24 wonton wrappers
- 4 tablespoons Fustini's Tuscan Herb olive oil, divided
- 1/2 cup onion, small diced
- 1/2 red pepper, small diced
- 1/2 green pepper, small diced
- 1 tablespoon Fustini's Grilling Rub
- 1 lb sirloin steak, sliced thin & chopped
- 8 slices Provolone cheese, cut into 1" pieces
- parsley for garnish

- Preheat oven to 350 degrees F. With a pastry brush, grease the inside of 24 cups of a mini muffin tin. Insert a wonton wrapper into each opening, pressing the bottom and making sure the sides do not fold over the middle. Bake for 5 minutes.
- In a medium sauté, pan heat 1 tablespoon of olive oil. Add onions and pepper and sauté, until tender. Remove from pan and set aside.
- Season steak with grilling rub, and toss to coat. Add 1 tablespoon of olive oil to the same pan and add steak. Cook for 2-3 minutes until light pink. (will cook more in the oven). Remove from heat and combine with onion and pepper mixture.
- In the bottom of each wonton cup, add 1/2 of the cheese pieces. A scoop of the meat mixture and top with more cheese to each cup. Return cups to the oven for another 3-4 minutes until the cheese is melty. Remove from tins and garnish with parsley before serving.

Substitute your favorite herb-infused olive oil
