Poached Pears with Pistachio Ice Cream

- 2 pears - peeled and quartered
- 1 cup sweet white wine
- Splash of Fustini’s Cinnamon Pear balsamic
- 1 cinnamon stick
- 1/4 cup sugar
- Chopped pistachios
- Pistachio Ice Cream
- 2 cups heavy cream
- 1 cup milk
- 1/2 cup sugar
- 3 egg yolks
- 1/4 cup pistachios

Directions
- Bring pears, wine, vinegar, cinnamon stick and sugar to a simmer in a medium size pot over low heat. Once the pears are cooked, remove to service bowls, top with pistachio ice cream and some chopped pistachios.
- Bring heavy cream, milk and sugar to a simmer over low heat. Once simmering, temper the egg yolks in a separate bowl, then pour back into the pot and stir with spatula over low heat until thickened. Remove from heat, strain, and chill overnight. Freeze in the ice cream freezer, adding pistachios towards the end. Freeze fully before serving.
