Ingredients
- 1 ½ cups blanched almonds
- ¼ teaspoon salt
- 1 stick butter, room temp
- 1/3 cup Fustini's Delicate SELECT olive oil
- ½ cup sugar
- 1 ¾ cups flour
- ½ cup powdered sugar
- 2 tablespoons cinnamon

- In a food processor, process almonds until they are the texture of coarse sand, set aside.
- Beat butter, oil, and sugar in a stand mixer until light and airy. Add flour and almonds and mix until a dough forms. Wrap dough in plastic wrap and chill for an hour.
- Pinch off a tablespoon of dough at a time and roll into a ball. Place on a sheet tray lined with parchment and bake at 350 for 10-12 minutes until golden brown. Place the powdered sugar and cinnamon in a sieve and shake over the finished cookies.
