Pomegranate Gin and Tonic

- 1/2 cup sugar
- 1/4 cup pomegranate juice
- 1/4 cup Fustini's Pomegranate balsamic
- 1-ounce fresh lime juice
- crushed ice
- pomegranate arils
- lime wedges
- Rosemary sprig for garnish

- In a small saucepan bring sugar, pomegranate juice and balsamic to boil. Cook until sugar is dissolved. Remove from heat and allow to cool.
- Fill a glass with a few pomegranate arils and crushed ice. Pour the gin over the ice, then the tonic. Stir in the simple syrup. Serve immediately with a rosemary sprig popped in and pomegranate arils sprinkled on top.
Recipe Note
This drink is sweet like a holiday punch. If you wish it to remain more tart/bitter, use less simple syrup and more straight-up balsamic and juice. Adapted from howsweeteats.com
