Pork Tenderloin Herb Agrodolce Sauce

Ingredients
- 1 - 1 1/2 pound pork tenderloin
- 1 tablespoon Fustini' Tuscan Spice Blend
- salt and pepper to taste
- 1 large red onion, cut into wedges
- 4 tablespoons Fustini's Tuscan Herb olive oil
- 1/4 cup Herbs of Naples balsamic
- 1/2 cup Fustini's Thyme balsamic
- 2 tablespoons butter, cold

- Remove done pork tenderloin from pan and allow to rest 5-10 minutes add butter to the sauce to help thicken. Slice pork across the grain and top with sauce before serving.
- In a small bowl, combine salt, pepper and Tuscan Spice blend. Rub seasoning over pork and let sit for 20 minutes. In a large skillet, heat 2 tablespoons of olive oil. Add pork and sear all sides (about 2 minutes per side). Remove pork tenderloin from the pan and to the pan, and add onion wedges. Cook until the onion begins to brown. Stir in vinegar, to deglaze the pan. Return pork to pan, cover, reduce heat, and cook until internal temperature reaches 140 degrees, Basting with sauce every few minutes.
