- 2 Russet potatoes
- 2 tablespoons Fustini’s Rosemary olive oil
- salt and pepper
- fresh rosemary or chive, chopped

- Heat a nonstick pan over moderate heat. Peel and thinly slice the potatoes on a mandolin. Add olive oil to the pan and let heat. Just before the oil starts to smoke, arrange the potato slices in an overlapping pattern at the bottom of the pan and season with salt and pepper. Continue layering, seasoning, and overlapping potato slices until a few layers have been built into the pan. Let cook without stirring until the bottom potato layer is golden brown and crispy and the top layer is just cooked through.
- Remove from heat and loosen carefully with a spatula. Invert onto a serving plate, garnish with fresh herbs, cut into wedges, and serve immediately.
