Potatoes with Gruyere

Ingredients
- 1 pound small waxy potatoes
- ½ small red onion, sliced thin
- ½ cup Fustini's Iron Fish Honey vinegar
- ½ cup water
- 1 tablespoon sugar
- 1 teaspoon salt
- 6 oz Gruyere cheese, sliced thin
- ½ cup cornichons, quartered
- 1 teaspoon Pyramid Flake Salt

- Preheat the oven to 400°,. Place potatoes in a pot filled with heavily salted cold water, bring to a boil, and cook 15-20 minutes until potatoes are tender.
- While the potatoes cook, heat up the Iron Fish Honey balsamic, water, sugar, and salt to a boil, and pour over the shaved onions.
- When the potatoes finish cooking, drain them and place them on a parchment-lined sheet tray. Cover them with the cheese slices and place them in the oven until the cheese is melted. Remove potatoes to a plate and garnish with the pickled onion and cornichons. Finish with the Fustini's Pyramid Flake salt.
