- 2 tablespoons Fustini's SELECT Medium olive oil
- 1 small yellow onion, coarsely chopped
- 6 cloves garlic, coarsely chopped
- 2 teaspoons kosher salt, divided
- 4 cups thinly shredded green cabbage
- 1 lb. store-bought or homemade corned beef, cut 1/4" thick
- 4 teaspoons Fustini's Garlic olive oil, divided
- 4 (10") flour tortillas
- 8 ounces shredded Swiss cheese

- In a large saucepan over medium-high heat, heat SELECT olive oil. Cook onion and garlic, stirring occasionally, until softened, about 10 minutes, season with 1 teaspoon salt. Reduce heat to medium. Add cabbage and cook, stirring occasionally, until wilted and caramelized, 5 to 6 minutes, season with remaining 1 teaspoon salt. Remove from heat and fold in corned beef.
- In a medium nonstick skillet over medium heat, warm 1 teaspoon Fustini's Garlic olive oil. Place 1 tortilla in skillet, arrange some cheese on one side of tortilla, then top with one-quarter of cabbage mixture. Sprinkle cabbage mixture with a little more cheese. Fold other side of tortilla over to create a half-moon. Cook until tortilla is toasted, 1 to 2 minutes per side. Repeat with remaining Garlic oil, tortillas, cabbage mixture, and cheese.
