Ingredients

2 cups baby spinach
1/4 cup cucumber slices, chopped
1 apple, chopped
1 teaspoon cinnamon
1-ounce pecans
6 ounces grilled or rotisserie chicken

Apple Dressing

1/4 cup Fustini's Delicate SELECT olive oil
3 tablespoons Fustini's Michigan Apple balsamic vinegar
1 teaspoon wholegrain mustard
salt and pepper to taste

Directions

Preheat oven to 425. Chop apple, sprinkle with cinnamon and a pinch of salt. Roast for 15 minutes, or until caramelized.
For the dressing, whisk ingredients together and combine with chicken.
Add chicken and dressing to the spinach, pecans and apples. Chill slightly before serving.
