Roasted Vegetable Frittata

Ingredients
- 8 eggs
- 1 cup milk
- fresh parsley, chopped
- salt and pepper to taste
- 1/2 cup stuffing cubes
- 1 cup cooked turkey, shredded
- 2 cups roasted vegetables (leftover broccoli, carrots, beans etc.)
- 2 tablespoons Fustini's Garlic olive oil
- 1 cup cheddar cheese

- Beat eggs, milk, parsley, salt and pepper. Add stuffing bread cubes, cooked turkey and leftover cooked vegetables (such as broccoli or cauliflower). Heat olive oil in an ovenproof 10-inch nonstick skillet over medium-high heat, add the egg mixture and cook 2 minutes. Reduce the heat to medium-low, top with grated cheddar and cook 10 minutes. Broil 3 minutes, then slice.
