Salmon BLT Salad

Ingredients
- 2 6-oz. salmon fillets
- Kosher salt and black pepper to taste
- 4 tablespoons Fustini's Basil Crush olive oil, divided
- 1/2 baguette, cut into small cubes
- 10 cups chopped romaine
- 2 cups cherry tomatoes, halved
- 1 avocado, halved, peeled, and diced
- 6 slices bacon, cooked, chopped
Dressing
- 1/3 cup mayonnaise
- 1/2 cup plain Greek yogurt
- juice of 1 lemon
- 2 garlic cloves, minced
- 1 teaspoon Fustini's Citrus Oregano balsamic
- 1 teaspoon honey
Directions
- Heat a medium sauté, pan over medium-high heat. Season salmon with salt and pepper. Brush with olive oil and add the salmon to the pan and sauté, salmon for 3-5 minutes until a hard sear appears, turn the filets over for 2-3 minutes on the other side. Remove from heat and let cool.
- In a large sauté, pan add 2 tablespoons of olive oil and toast the baguette cubes until brown and crunchy. Remove from heat.
- Toss lettuce, tomatoes, croutons, avocado, and bacon together. Chop up salmon and toss into the salad along with the dressing. Serve immediately.
- Whisk all of the dressing ingredients together and season with salt and pepper.
