- 1 tablespoon Fustini’s Medium SELECT olive oil
- 4 6-ounce center-cut salmon fillets, skinned
- salt and freshly ground black pepper
- 2 garlic cloves, pressed
- ¼ teaspoon coarse kosher salt
- ½ cup mayonnaise
- chopped thyme and oregano
- 2 tablespoons Fustini's Meyer Lemon olive oil
- 1 tablespoon fresh lemon juice
- freshly ground black pepper
- goat cheese
- fresh mini brioche buns/rolls
Directions
- Heat a grill-safe skillet over medium-high grill heat. Add oil. Cook salmon for 3-4 minutes on each side, until cooked and easily flaked with a fork. Transfer salmon to a plate, cover with foil and let rest for 5 minutes.
- Mash garlic and ¼, tsp. salt in a small bowl until a paste forms. Whisk in mayonnaise, oil, herbs, and lemon juice. Season with salt and pepper. Use mixture for salmon topping. Assemble salmon on a bun top with sauce and goat cheese.
Recipe Note
To add some crunch, toast buns before assembly.
