Ingredients
- 2 lbs tomatoes, chopped
- 2 slices sourdough bread
- ¼ cup Fustini's Garlic Olive Oil
- ¼ cup Fustini's SELECT Olive Oil
- 1 tablespoon Fustini's Sherry Vinegar
- 1 tablespoon fresh parsley, chopped
- 1 hard-boiled egg, finely chopped
- 2 slices prosciutto, finely chopped
- salt and pepper to taste

Directions
- Dunk bread in cold water, then squeeze it dry. Place chopped tomatoes, Sourdough Bread, Fustini's Garlic olive oil, Fustini's Single Varietal olive oil and Sherry vinegar in a blender and process until smooth.
- Pour soup into bowls and garnish with parsley, egg, and prosciutto.
