Ingredients
- 1 tablespoon Fustini's Medium SELECT olive oil, plus more for brushing
- 1 medium red onion, diced
- 1/2 pound bulk Italian sausage
- 3 cups fresh baby spinach
- 1 tablespoon Fustini's Parmesan Spice blend
- 1 tube (13.8 ounces) refrigerated pizza crust
- 3/4 cup shredded part-skim mozzarella cheese
- 1/2 cup goat cheese, softened
- Kosher salt and freshly ground black pepper
- 1/4 cup shredded parmesan cheese
- arrabbiata sauce, optional

- Preheat the oven to 400°,. Line a sheet pan with parchment paper. In a large skillet, heat the olive oil and sauté, onions until translucent. Add crumbled sausage over medium heat and cook until no longer pink, 4-6 minutes, drain. Add seasoning and spinach, cook and stir until wilted. Remove from heat and add goat cheese, salt, and pepper.
- On a lightly floured surface, unroll and pat dough into a 15x11-in. rectangle. Cut into 4 rectangles. Sprinkle mozzarella cheese on half of each rectangle to within 1 in. of edges. Spoon sausage mixture over mozzarella cheese. Fold dough over filling, press edges with a fork to seal. Place on prepared baking sheet. Drizzle and brush on olive oil and top with some grated parmesan. Bake until light golden brown, 10-15 minutes. If desired, serve with arribbiata sauce.
Recipe Note
Substitute your favorite herb or spicy-infused olive oil. If you don't want the spicy zip, you can use a marinara sauce.
