Ingredients
- 2 Tbsp Fustini's Garlic Olive Oil
- 1 Small Yellow Onion, Medium Dice
- 1 Bunch Hearty Greens (Collards, Kale…), Stemmed and Chopped
- 1 pt Cherry Tomatoes
- 1 tsp Fustini's Sherry Vinegar
- ½ Cup Roasted and Crushed Peanuts

Directions
- Heat the garlic oil in a pan, add the onion and tomatoes, and sauté, until onions are translucent and tender, and tomatoes have broken down. Then, add the greens and continue to cook until tender, about 5 minutes.
- Add sherry vinegar and allow to cook down with the greens. When the greens are cooked, plate them and top with the crushed peanuts.
