Sauteed Walleye with Citrus Butter
Ingredients
- 6 Walleye fillets, skinless and boneless 6 to 8 Ounces Each
- 1 cup milk
- salt and pepper
- 1/2 cup cracker meal
- 1/2 cup Fry Krisp breading mix
- 1/2 cup walnuts, finely chopped
- Fustini's Robust SELECT olive oil
- 2 tablespoons Fustini's Garlic olive oil
- 4 tablespoons clarified butter
- 1/3 cup orange juice
- 1/4 cup lemon juice
- 1 teaspoon Fustini’s Sicilian Lemon Balsamic Vinegar
- 2 tablespoons soy sauce
- 2 teaspoon lemon zest
- 2 teaspoons orange zest

Directions
- Place walleye fillets in milk and let sit for 60 minutes. Combine cracker meal, breading mix and walnuts. Remove fish from milk, season with salt and pepper and press into breading mix. Heat olive oil in a large skillet over moderate heat and add fish. Fry until golden brown, crispy and fully cooked. Serve with Citrus Butter on the side for dipping
- Combine all ingredients and warm them before serving.
