Sheet Pan Salmon and Broccoli

Ingredients
- 1 shallot or 1/2 onion, diced
- 2 garlic cloves, minced
- 1 red bell pepper, sliced, plus more for garnish
- 2 teaspoons fresh ginger, grated
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon Fustini's Sesame oil
- 2 tablespoons Fustini's Ginger and Honey balsamic
- 4 skinless salmon fillets
- 1 1/2 cups broccoli, cut into florets
- 1 tablespoon Fustini's Delicate SELECT olive oil
- cooked rice for serving

- Combine the shallot, garlic, red pepper, ginger, soy sauce, honey, balsamic and sesame oil in a large dish. Add the salmon fillets and turn to coat. Set aside for 30 minutes to marinate. Meanwhile, preheat the oven to 400 degrees. Line a baking tray with parchment paper. Place the broccoli in a bowl, toss with olive oil and season with salt and pepper. Place on the prepared tray and roast for 15 minutes.
- Push the broccoli to the sides of the tray. Place the salmon fillets in the center of the tray and drizzle with the marinade. Roast for a further 12-15 minutes or until the salmon is cooked through. Sprinkle with the extra diced red pepper. Serve with steamed rice.
