Shredded Potato Cups

- 2 cups shredded potatoes
- 3-4 tablespoons Fustini's Robust SELECT olive oil

- Place shredded potatoes in a bowl and cover with water. Let shreds soak for 30 minutes. Drain and squeeze out as much moisture as possible.
- Grease the bottom of muffin tins with olive oil. Place a small amount of shredded potato on the bottom of each muffin well. Place an empty muffin tin on top to hold the potato mixture down and this will help form the "cup" while baking.
- Bake at 350 degrees for 60 minutes. Remove and use for vegetables or meats.
