Ingredients
- 3 cups sliced onions
- 5 tablespoons Fustini's Robust SELECT olive oil, divided
- 1 tablespoon Fustini's 18 Year Traditional balsamic
- 1 tablespoon Worcestershire sauce
- Kosher salt & freshly ground black pepper
- 1 1/2 lbs sirloin steak
- 1/2 cup mayonnaise
- 2 tablespoons Harwood Gold Horseradish Mustard
- 3-4 drops of Fustini's White Truffle olive oil
- 2 cups arugula
- 18 Slider rolls (Sourdough, Pretzel etc)
- Fustini's Pyramid Flake salt
- 9 slices Guéyere or Swiss cheese

- In a medium-size sauté, pan, heat 1 tablespoon of olive oil over medium heat. Add onion slices and a little salt. Sauté,, stirring often until onions start to caramelize, about 20-25 minutes. Add balsamic and Worcestershire. Combine well, remove from heat and set aside.
- Preheat the oven to 350 degrees F. Lay out sliders open face on a sheet pan, (for ease, place bottoms on one sheet pan, and tops on another sheet pan). Drizzle with olive oil and sprinkle with sea salt. Place in pre-heated oven for 5-8 minutes until lightly toasted. Remove and reserve, keep the oven on.
- Season both sides of the steak with salt and pepper. Drizzle with olive oil and rub to coat. Heat a cast iron skillet (or other oven-proof skillet). When hot, add steaks and allow to sear on one side for 2-3 minutes. Turn over and sear the other side for 2 minutes. Remove from stove and place in the oven for 5-8 minutes until internal temperature reaches 130 degrees F. Remove from the oven, transfer to a cutting board, and allow to rest for 5-6 minutes then cut against the grain into strips.
- While the steak is resting, in a small bowl, combine mayonnaise, mustard, and truffle oil. Mix well. In another bowl, combine arugula, 1 tablespoon of olive oil, and a little more salt.
- Reduce oven heat to 'warm.' To assemble, place a little mayo sauce on the top and bottom halves of the sliders, to the bottom half add some caramelized onion, some strips of sirloin, and 1/2 slice of cheese. Place in the oven until the cheese melts. Place arugula on the top halves of the sliders. When the cheese has melted, create your sliders with the two halves of the buns and serve.
