Ingredients
- 1 3 1/2 - 4 lb chuck roast
- Kosher salt and freshly ground black pepper
- 2 tablespoons Fustini's Chipotle olive oil
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground cayenne pepper
- 1/4 cup Farmstyle Sriracha
- 1 yellow onion, diced
- 3 tomatillos, puréed

- In a large skillet, heat olive oil over medium-high heat. Season each side of the meat with salt and pepper and place in the prepared skillet. Sear both sides for 4-5 minutes. Remove from pan.
- Add seared meat to the slow cooker. Top with spices, sauce, onion, and tomatillos. Add additional water to the slow cooker so that the meat is 1/2 way underwater.
- Cover and cook on high for 4 hours. Reduce heat to low for an additional 2 hours until the meat falls apart.
- Once done, remove from liquid and allow to cool enough to handle. Shred meat and reserve as desired.
Recipe Note
Great to make a large batch and freeze in smaller portions for tacos etc. If your slow cooker can 'sear', you can do all this in the slow cooker!
