Ingredients
- 6 Pork Loin Chops - Bone In 2 Inches thick
- 2 Quarts Water - Very Cold
- 1/2 Cup Kosher Salt
- 1 Tablespoon Molasses
- 2 Tablespoons Fustini's Michigan Apple Balsamic Vinegar
- 3 Cups Hard Apple Cider
- 2 Cups Chicken Stock
- 1 Stick Butter - Cold and Cut into pieces
- 1/ 2 teaspoon Fresh Thyme
- 1/2 teaspoon Fresh Parsley
- Salt and Pepper

Directions
- Place pork chops into large container. Combine water, salt, molasses and vinegar in bowl and whisk until salt is dissolved. Pour over pork chops and let brine in refrigerator overnight. Remove from brine and dry with paper towels. Place on sheet pan and let dry another night uncovered in refrigerator. Smoke chops to 145 degrees and finish in preheated oven to 160 degrees. Serve immediately.
- Place cider in large pot and bring to simmer over moderate heat. Simmer cider until reduced by half. Add chicken stock and bring back to simmer. Simmer until reduced by one third. Remove from heat, add butter and swirl to combine. Season with thyme, parsley salt and pepper and keep warm until ready to serve.
