Smoky Pulled Chicken

Ingredients
- 1 tablespoon Fustini's Chipotle olive oil
- 4 chicken breasts
- 1 red onion, finely chopped
- 3 garlic cloves, crushed
- 1 tablespoon ground cumin
- 1 tablespoon sweet paprika
- 1 tablespoon dried oregano leaves
- 3 teaspoons ground coriander
- 1 cup pureed tomatoes (or canned)
- 1/2 cup chicken stock
- 2 chipotle in adobo sauce, chopped
- 2 tablespoons brown sugar

- Heat the olive oil in a large frying pan over medium heat. Cook the chicken for 5 minutes on each side or until browned. Transfer the chicken to a slow cooker.
- Add the onion to the pan and cook, stirring, for 5 minutes or until softened. Add the garlic and cook, stirring, for 30 seconds or until aromatic. Add cumin, paprika, oregano, and coriander. Cook, stirring, for 30 seconds or until aromatic. Add the tomatoes, chicken stock and the adobo chipotles and sugar. Bring to a simmer. Pour the mixture over the chicken.
- Cook, covered, on low for 2 hours or until chicken is tender. Remove chicken and shred using two forks. Delicious in tacos, burritos, quesadillas, and other Mexican-inspired dishes.
Recipe Note
If you have a slow cooker that sears, this is easy to do all in the slow cooker! Just remove the chicken and sauté the onions etc in the slow cooker. Add the chicken back in!
