Soba Noodle Salad with Grilled Steak

Ingredients
- 1/2 cup soy sauce
- 3 tablespoons Fustini's Sesame oil, divided
- 1/4 cup Fustini's Ginger and Honey balsamic
- 2 tablespoons Farmstyle Sriracha
- 2 garlic cloves, minced
- 1/4 cup + 2 tablespoons Fustini's Medium SELECT olive oil
- 1 lb flank steak
- 8 oz soba noodles
- 1 large carrot, peeled & thinly sliced
- 1 large cucumber, seeded and thinly sliced
- 2 green onions, sliced, divided
- 2 tablespoons sesame seeds
- Kosher salt and fresh ground black pepper to taste

- In a large bowl, whisk together soy sauce, sesame oil, vinegar, Sriracha and garlic. Slowly whisk in SELECT olive oil until combined.
- Place steak in a shallow pan or ziploc bag and pour 1/3 of soy mixture over steak. Let sit for 10 minutes.
- Bring a pot of water to a boil. Cook soba noodles according to package directions, drain and rinse with cold water. Place in a large bowl and toss with carrots, cucumber and 1/2 of green onions. Pour remaining soy mixture over noodles and toss gently to combine.
- Heat a grill pan or grill to high. Remove steak from marinade and discard marinade. Season with salt, pepper and lightly oil. Grill steak for 5 minutes per side for medium. Let rest for 5 minutes before slicing diagonally. Serve steak over soba noodle salad. Drizzle with remaining tablespoon of sesame oil and garnish with remaining green onion and sesame seeds.
Recipe Note
A great recipe to use up leftover grilled steak! Substitute Fustini's Spicy Korean balsamic for a little more kick. Adapted from delish.com
