Southwest Egg Roll Bites

Ingredients
- 1 cup fresh baby spinach, chopped
- 2 tablespoons finely chopped red onion
- 2 tablespoons finely chopped red pepper
- 1 jalapeno pepper, seeded and minced
- 1 tablespoon Fustini's Chipotle olive oil, plus more for greasing
- 1/3 cup corn
- 1/4 cup black beans, rinsed and drained
- Kosher salt
- dash cayenne pepper
- dash ground cumin
- 3/4 cup shredded Mexican cheese blend
- 4 oz cream cheese
- 30 wonton wrappers
- salsa for serving

In a large skillet, heat olive oil over medium-high heat. Add spinach, onion, red pepper, and jalapeño and sauté until tender. Stir in the corn, beans, and seasonings, stirring and heat through. Remove from heat and add cheese and cream cheese, stirring until melted.
Place a wonton wrapper with a point towards you. Place 2 teaspoons of filling in the center of the wrapper. Fold the bottom corner over the filling and fold the side corners to the center over the filling. Roll towards the remaining point. Moisten the top corner with water. Press and seal the wonton closed. Repeat with remaining wrappers and filling.
Brush the bottom of a 15”x10” baking pan with more olive oil. Place rolls into pan and brush the tops of each roll with more olive oil. Bake in a 425 degree F, oven for 8-10 minutes or until golden brown, turning once. ALTERNATIVELY: Brush both sides of each roll with olive oil and place in an air-fryer preheated to 425 degrees F. Cook for 5 minutes, turning and cooking another 2-3 minutes until golden brown. Serve with salsa.
Recipe Note
