Ingredients
- 1 pound chicken tenders
- 2 teaspoons smoked paprika
- 1/4 cup Fustini's Citrus Oregano balsamic
- Fustini's Garlic olive oil
- 1/4 cup bell peppers, sliced
- 1/4 cup zucchini, sliced into rounds
- 1/4 cup summer squash, cut into rounds
- 1/4 cup eggplant, slice into rounds
- 1 1/2 cups of canned cannellini beans, rinsed, drained
- 1/4 cup pitted mixed olives, drained
- 1/4 cup baby spinach leaves
- 1 teaspoon, garlic clove, minced
- 1 tablespoon fresh chopped oregano

- Heat a barbecue grill or grill pan on medium. Whisk paprika, 1 tablespoon of balsamic, 2 tablespoons of olive oil and garlic. Season with salt and pepper. Add half of this mixture to the chicken in a bowl. Add chicken to the hot grill and cook for 3 mins each side or until golden brown and cooked through. Transfer to a plate. Cover with foil to keep warm.
- Add sliced vegetables (peppers, zucchini, squash, eggplant) to the grill and cook until starting to soften with grill marks. Remove from grill and place in a medium bowl with the beans and spinach. Toss to combine with reserved oil and vinegar mixture.
- Move vegetables to a serving bowl and placed cook chicken over top. Finish with olives and garnish with chopped oregano.
Recipe Note
Substitute your favorite herb-infused olive oil or balsamic. A great recipe to use your favorite fall vegetables.
