Ingredients
- 4 small eggplants
- 1/4 cup Fustini’s Garlic olive oil
- 2 lemons, juiced
- 1/3 cup tahini
- 1 teaspoon Fustini's Pyramid Flake sea salt
- 2 tablespoons Fustini's Aji Verde Crush olive oil

- Slice eggplant into 1/2 inch rounds, toss with salt and let sit in a colander to drain for 15 minutes. Rinse the eggplant of the salt and dry with a paper towel. Toss the dry eggplant with Garlic oil and season with a pinch of salt. Lay the eggplant in an even layer on a parchment lined sheet tray and roast under the broiler until golden brown. Flip slices and cook until golden on the other side.
- Remove the eggplant and let it cool slightly. Peel the skin off and place the flesh in a food processor along with the lemon juice, tahini and flake salt. Process until smooth, spoon into a bowl and drizzle Aji Verde Crush olive oil on top.
