Spicy Reuben Pickle Bites

Ingredients
- 2 cups pickle chips, drained
- 4 ounces thinly sliced corned beef
- 3 ounces thinly sliced Swiss
- 1/4 cup sauerkraut, dried
- 1 cup mayonnaise
- 2 tablespoons sweet pickle relish
- 2 tablespoons ketchup
- 1 tablespoon Fustini's Iron Fish Honey vinegar
- 2 teaspoons Fustini's Cayenne Crush olive oil
- 1 tablespoon shallot, minced
- 1 tablespoon jalapeno pepper, seeded and minced
- 1 tablespoon honey

Directions
- Make the dressing: Mix all ingredients together and refrigerate until ready to use. Will keep for up to 1 week.
- Arrange half the pickle chips on a platter. Top with sliced corned beef, Swiss, sauerkraut, and drizzle with dressing. Close the bites with remaining half of pickles and a toothpick.
