Ingredients
- 1 cup uncooked farro, picked through, rinsed and drained
- 3 cups of water
- 4 cups mixed frozen vegetables or fresh vegetables in season
- crushed red pepper flakes to taste
- dried oregano to taste
- 3 tablespoons Fustini's Robust olive oil

- Bring farro, water and 1 teaspoon of salt to a boil in a 4-quart saucepan. Lower heat, cover the pan and simmer until tender, 25-40 minutes. Rest farro undisturbed for 10 minutes.
- Sauté, mixed vegetables in 1 tablespoon of Fustini's SELECT olive oil. Add red pepper flakes to taste while vegetables are cooking. Place cooked farro on a platter and arrange sauteé,d vegetables around it. Drizzle with remaining olive oil and sprinkle with oregano and additional red pepper flakes for color and taste.
