Spinach Strawberry Salad

Ingredients
- 1 9-ounce bag fresh spinach leaves, approximately 4 cups
- 8 ounces strawberries, sliced thick
- 1/4 cup small red onion, sliced
- 1/2 cucumber, sliced
- 1/4 cup sliced almonds, (can be toasted lightly in oven)
- 2 tablespoons of fresh lemon juice
- 1 1/2 teaspoon poppy Seeds
- 1/3 cup sugar
- 1 1/2 tablespoons Fustini's Meyer Lemon Olive Oil
- 3 tablespoons Fustini's Sicilian Lemon Balsamic Vinegar
- 1/2 teaspoon of lemon zest

Directions
- Place spinach in a large bowl, mix in strawberries, onions, and cucumbers. Pour Lemon Vinaigrette over spinach mix. Toss well then sprinkle with toasted almonds.
- In small bowl mix poppy seeds, Fustini&rsquo,s Meyer Lemon Olive Oil, Fustini&rsquo,s Sicilian Balsamic Vinegar, sugar, and lemon zest, then whisk until well blended.
