Spring Vegetable Salad with Lime Poppy Seed Vinaigrette

Ingredients
- 1 pound asparagus, peeled and cut into bite-size pieces and blanched
- 1 large carrot, peeled and cut into small slices and blanched
- 3-4 radish, sliced thin
- 2-3 green onions, sliced thin
- 3-4 artichoke hearts, quartered
- Spring mix
- Grape tomatoes
- Supreme of lime
- Juice of 1 lime, approx. 2 tablespoons
- 2 tablespoons Fustini’s 12 Year White Balsamic vinegar
- 1/4 teaspoon poppy seeds
- salt and pepper
- 1 tablespoon Fustini’s Persian Lime olive oil
- 2 tablespoons Fustini’s Delicate SELECT olive oil

Directions
- Place asparagus, carrots, radish, green onions and artichoke hearts in a bowl and pour vinaigrette over top. Stir to coat and serve over spring mix with grape tomato and supreme of lime.
- Combine lime juice vinegar poppy-seeds, salt and pepper and add EVOO. Shake to emulsify and use immediately.
